I love trying new recipes. Last month I went looking for a Banana Cookie recipe but didn't love the one I tried offline so I converted my grandmothers zucchini/banana (it can be used for either) bread recipe into a cookie recipe and LOVE how they turned out. Especially with cream cheese frosting- EVERYTHING needs cream cheese frosting on it! Anywhoo- I thought I would share. This is the recipe that I used for the first month of the Cookie-of-the-Month Club :o)
Banana Cake Cookies
Recipe yields 3 dozen cookies
Preheat oven to 350 degrees
1/2 C shortening
1 C sugar
2 eggs
1 C mashed bananas
1 tsp. vanilla extract
2 C all purpose flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 tsp. cinnamon
1/2 C chopped pecans (optional)
Cream shortening & sugar. Add eggs, banana & vanilla, beat well. Sift together flour, baking powder, baking soda, salt & spices. Add to creamed mixture, mix well. Stir in pecans if desired.
Drop dough by rounded spoonfuls 2 inches apart onto greased cookie sheet. Bake for 10-11 min. Remove to wire rack to cool. Then frost with cream cheese frosting of your choice, I chose to melt mine in the microwave and then drip into center of cookie.... ENJOY!
